Tropical Granola (AKA pretend you are on the beach with me!)

I am writing this right now with the ocean breeze lofting into the bus and listening to the waves crash just 50 feet from the front door. New England friends- I’m sorry to rub it in, but ahhh this is so nice! I wanted to spread these beach vibes to you, by sharing this super easy granola recipe! The hint of ginger and coconut will bring your taste buds to the beach, even if you are about to shovel snow. 

 

I love to keep my granola recipes simple, so that I can add in other mixin’s to switch up the flavors. I enjoyed this granola with some fresh mango and Stonyfield vanilla yogurt. It also went great with my smoothie bowl (frozen mango blended with yogurt) topped with fresh pineapple! Let me know if give this recipe a try & what you think!

Tropical Granola

  • prep time: 5 minutes
  • cook time: 15-20 minutes
  • total time: 25 minutes

Ingredients:

  • 2.5 cups of Old Fashioned Oats
  • 1 heaping tablespoon of Coconut Oil
  • 1/4 cup Honey
  • 1/4 cup dried Coconut flakes
  • 1/4 teaspoon of Cinnamon
  • 1/2 teaspoon of powdered Ginger
  • Pinch of salt
  • Optional: chopped dried ginger, chopped nuts, chia seeds

Instructions:

  1. Preheat oven to 375 degrees. Lightly grease a cookie sheet.
  2. In a medium size mixing bowl, combine all ingredients.
  3. Spread oat mixture evenly over the cookie sheet. Bake for 15-20 minutes. The edges will be slightly browned. The granola will continue to harden after being out of the oven, so don't worry if it doesn't seem totally done when you pull it out!
  4. Enjoy!
