Golden Ginger Granola
This is a fun (slightly spicy) twist on your classic granola! Does anybody else love turmeric?? Turmeric lattes or “golden milk” are one of my favorites when I am out in civilization (small town northern NH problems) ! I sometimes add a teaspoon of Golde turmeric blend into my morning coffee for a yummy change of pace.
Turmeric is a spice that gives curry its rich golden color. It has a distinct heat and flavor profile. Added bonus it is shown to aid with reducing inflammation in the body. I find for myself when I pair it with ginger it helps soothe an upset stomach! This golden ginger granola is perfect when paired with your favorite yogurt. (I’m a big fan of Stonyfield Vanilla) Yogurt is a great source of probiotics so between your ginger, turmeric, and yogurt your belly will be happy!
Makes about 4 cups
Ingredients:
· 3 cups old fashioned oats
· ½ cup crushed almonds
· ½ cup uncooked pumpkin seeds
· ½ cup unsweetened coconut flakes
· ¼ cup turmeric blend**
· ¼ cup chopped dried ginger
· 1 tsp vanilla
· 1 tbsp melted coconut oil
· Drizzle with honey to your liking (about ¼ cup)
Directions:
Heat oven to 350 degrees. Mix together all ingredients (except honey) and place on a baking sheet. Spread mixture thin and relatively even, then drizzle with honey. Bake for ten minutes, stir, and bake for about 10 more minutes. It will harden up more once out of the oven.
BAM. Last step is to enjoy this freaking awesome granola! And share it if you’re feeling friendly :p
** I use Golde turmeric blend…IT’S so yummy & handy to have. Or you can make your own: 4 teaspoons ground Turmeric Powder, 2 teaspoon ground Cinnamon, 2 teaspoon ground Ginger, 1 teaspoon ground Cardamom, ½ teaspoon ground Nutmeg, 6 pinches finely ground Black Pepper.
Fun fact: black pepper assists in the absorption of turmeric in the body. But I personally think the two flavors are lovely together besides the bonus health benefit!
